1. For the Polish: Zurek
The Polish have basically decreed that Easter is a time for bread bowls -- which I can't complain about. Zurek is one dish that families will carry to church on the Saturday before Easter to be blessed ahead of eating, a hearty meal of sausage, carrot and boiled eggs whose flavor profile errs on the sour side, but gets gobbled up nonetheless. Make it here!
