1. Shaved Fruits
This is like shaved ice, but better because it uses frozen fruit that is quickly grated on a micro planer or box grater into slush. This is kind of genius and we're wondering why we didn't think of this sooner.
2. Jell-O Rolls
We're calling these the new Rice Krispies Treat of the 21st century -- an easy potluck dish you can whip together with stuff probably already in your pantry. Just mix together Jell-O, water and marshmallows, then cool and roll and you have a sweet, squishy delight.
3. Watermelon Cake
Fruit plates have moved beyond the watermelon basket. This "cake" is carved out of melon and stacked, then adorned with whatever fruits you like. It's a delicious, impressive centerpiece.
4. Mango Lime Sorbet
Freeze mango and then blend with lime and honey for a simple
dairy-free frozen treat. Scoop it back into the mango shells and refreeze for a
festive touch.
5. Banana Bites
Slice up some ‘naners, spread with peanut butter, cover in
yogurt and freeze. You can add some cocoa nibs before freezing for a chocolatey
crunch.
6. Chocolate Peanut Butter Frozen Yogurt Clusters
These treats come with an extra boost of protein. Mix together protein powder with yogurt, vanilla, sweetener and chocolate chips. Scoop onto a tray and top with peanuts. Freeze then coat in a melted chocolate and coconut oil mix. Freeze again and enjoy.
7. Frozen S'mores
Move the s'mores from the campfire to the freezer with these clever frozen treats. Layers of graham crackers, chocolate pudding, cream cheese and marshmallow look and taste like s'mores, but colder.
8. Lemon Posset
This one is fancy but it’s only four ingredients. Lemon
juice, strawberry puree, heavy cream and sugar make for the prettiest little pudding
cups, which are a nice snack or worthy to serve at a party.
9. Rice Paper Fruit Rolls
Salad wrapped up in a rice paper roll is delicious, but why not try fruit instead? Chop fresh fruit and roll up in a softened rice paper wrapper with mint leaves. Pair with a limey dip in a nod to Vietnamese flavors.
10. Strawberry Clusters
Similar to the Chocolate Peanut Butter Patties but fruity,
this recipe combines yogurt and strawberries together in little patties that
are frozen and dipped in chocolate. You could eat these for breakfast and feel
good about it all day.
