Season two of the beloved TV show “The Bear,” featuring Jeremy Allen White, was released earlier this summer in June. And although the second season has been airing on our screens for two months, the flavorsome potato chip omelette featured in episode nine has just begun skyrocketing in popularity on TikTok. Dozens of food creators have been whisking up this unexpected flavor explosion of an egg dish.
This omelette, vastly different from the kind you would order at any mom ‘n pop (no shade, those can be delicious, too), is made in the style of a French omelette. This means the technique is slightly different, scrambling the eggs in the pan until a thin film sets over. Unlike the American single fold, you then fold the omelet into a tri-fold.

Back to “The Bear,” this dish is simply exquisite between the saltiness of the eggs and the crunch of the chips. The combination of texture and richness of all savory ingredients makes it so. Dang. Good. So, let’s crack on to how you actually make the omelette.
The Ingredients
- 3 large eggs
- Boursin Cheese
- 4-5 Tablespoons butter
- Chopped Chives
- Potato Chips
- Salt
The Steps
- Whisk your eggs through a sieve into a bowl.
- Season your whisked eggs with salt.
- Place your non-stick skillet (preferably 10 inches) on medium-high heat and melt the butter in it, swirling it around to coat fully.
- After the butter starts foaming, reduce to medium-low heat and add the eggs. Have your spatula and boursin ready as things move fast from here.
- Shake the pan and simultaneously scramble and stir the eggs (as shown in the French omelette video) until the bottom of the eggs are set.
- Fill a piping bag with Boursin cheese and layer it down the middle of the eggs.
- Turn the heat off and roll one side of the omelette halfway over the boursin cheese.
- Once you have sealed it, roll the omelette over the rest of the way onto your plate.
- Rub the plated omelette with butter until it’s melted. Then, add your chives and cracked potato chips.
