As a meat-of-all-kinds eater, it's hard for me to imagine a world without sushi. And I'm not even that good at eating sushi -- I stick to maki rolls and poke bowls, never quite venturing into nigiri or sashimi territory. Still, the combinations of wasabi, soy sauce, sticky rice and spicy mayo, all rolled around a succulent piece of salmon or tuna? Divine. Lucky for the vegans of the world, they're not quite missing out -- and they don't have to limit themselves to cucumber and avocado rolls, either.
A new trend of vegan sushi is taking root, where instead of fish, the base of the dish is marinated, cooked watermelon. The texture supposedly mimics that of raw tuna, and all the other wonderfully spicy, salty flavors and toppings of great sushi are fair game.
TikTok user Eva has recently gone viral for her tutorial of watermelon "tuna"...
...but she isn't the first one to come up with the idea. As long as you have the right ratio of marinade ingredients and the oh-so-good extras (avocado, cucumbers, etc.), anyone can make their own kind of sushi.
