1. First, the O.G. Recipe
TikTok creator Logan’s catchphrase is “sometimes you need to
eat an entire cucumber” and this is the video that launched the cucumber
trend. It’s a fairly simple recipe with just a deli container, a mandoline and
a cucumber (obviously) and some basic seasonings. He has a bunch of variations
with cucumbers and different themes, like Everything Bagel with smoked salmon or a creamy dill,
but after eating cucumbers all summer long, we’re in the mood for something
different.

2. Cabbage Everything Bagel Salad
You can still make the Everything Bagel salad without
cucumbers. Here, cabbage adds a kimchi-like texture but still has that
refreshing crunch.

3. Fennel Salad
Fennel has that licorice-y flavor that just needs a simple

4. Carrot Salad
Shave carrot slices thin with a vegetable peeler and add it
to a jar with a savory Thai-inspired soy peanut dressing. It’s a very quick and
healthy snack.

5. Pepper Plate
Put the mandoline away for this one. Roast a couple of peppers (any color). Toss the peeled
peppers in a vinaigrette, serve with burrata cheese and bread, and lunch is

6. Italian Chopped Chickpea Salad
For a heartier meal, you need to add chickpeas to your
salad. Add more veggies and dressing for this chopped Italian salad. Plus, this recipe is a great option if the mandoline scares you.
@graceelkus because I know you already have the container!!! vegetarian italian chopped chickpea salad 🥗 serves 2 as a main, 4 as a side for the dressing: 2 small cloves garlic 2 tablespoons red wine vinegar 2 tablespoons extra-virgin olive oil 2 teaspoons Dijon mustard 2 teaspoons dried oregano Kosher salt & freshly-ground black pepper for the salad: 1 (15-ounce) can chickpeas, drained, rinsed, and patted dry 1/2 pint cherry tomatoes, halved 2 large or 4 small stalks celery, diced 2 Persian cucumbers, diced 1/2 small red onion, sliced 6 pepperoncinis, sliced 1/3 cup pitted kalamata olives, sliced 4 ounces mini mozzarella pearls or diced provolone cheese thinly sliced radicchio (optional) You’ll be dividing everything between two deli containers to create two entree-sized salads: To each container, add 1 clove grated garlic (grate it directly into the container), 1 tablespoon vinegar, 1 tablespoon oil, 1 teaspoon Dijon, 1 teaspoon oregano. Season to taste with salt and pepper, then swirl the container to help the ingredients emulsify. You want to build the dressing first so that it can start to flavor the chickpeas and veggies immediately. Divide the remaining ingredients between the containers: chickpeas, tomatoes, celery, cucumber, red onion, pepperoncinis, olives, and cheese. Lid the containers and shake until combined. Season to taste with salt and pepper. Enjoy straight from the container, or eat with thinly sliced radicchio. red onion. It looks good but would probably be better when tempered with some
toast and a smoked fish.

8. Watermelon Rind Kimchi
Logan lives on and off in South Korea and makes a ton of
content about Asian recipes, especially variations on kimchi, a spicy Korean
fermented pickle. Here, he turns watermelon scraps into something delicious.
