1. Spinach Pesto Pasta
For a filling meal, pasta is a great option. This version loads in the produce with spinach, broccoli and tomatoes, although you could certainly swap in whatever seasonal items you have on hand (peas and asparagus, anyone?). Homemade pesto adds an extra special touch and plenty of fresh, bright flavor. Pack it in an insulated food container to keep it warm, or enjoy it cold like pasta salad.
