The sweetness of this fruit pairs perfectly with the toasty, nuttiness of the hazelnut meal, and you can easily make these gluten-free. The persimmons get extra-sweet and caramelized as the pancakes cook, and the whole meal comes together with maple syrup at the end. You could also add crushed hazelnuts or your other favorite toppings.
