1. Oleo Saccharum
The name may sound exotic, but this recipe is as simple as
syrup. Just put citrus peels (any kind or a mix) in a mason jar with a healthy
amount of white sugar. While you let it sit, the oils will be drawn out of the
peels by the sugar, also dissolving most of the sugar. Add a little hot water
and muddle to get every last drop of citrus oil out and you’ll be left with a
rich syrup, perfect for mixing with spirits like gin, whiskey and Campari.
