2. Butternut Squash and Black Bean Enchilada Skillet

energy for a one-skillet meal (lazy enchiladas, if you will), this is the
recipe you want. Canned black beans make a great companion to healthy and
hearty butternut squash.
If you’re trying to get more greens in your diet in the new
year, this is the perfect vehicle for that. Swiss chard is suggested to go along
with canned white beans, but you can use whichever greens you wish.
