We barely knew you, feta pasta. But
it’s time to make room for the next TikTok food trend, pesto eggs.
It’s kind of an obviously simple
recipe that’s been in front of us the whole time. To make it, you simply take a
spoonful of pesto (jarred is fine, but homemade is even better), plop it into a
frying pan and use that as the oil to fry an egg or two. Slide the pesto-fried
egg on toast and you’re ready to eat.
The pesto not only helps the eggs not to stick, but it adds all
the big flavors pesto brings: garlic, salty cheese, nuttiness and bright green
herbs. It’s the perfect meal -- a little savory bomb, complete with a protein-filled
egg.
