1. Cauliflower rice
Cauliflower rice is a nice stand-in for traditional grain rice because it has less carbs and still leaves you feeling adequately satisfied, but not stuffed after a meal. Thankfully, the idea of cauliflower rice has gone mainstream enough that you can purchase this in your local grocery store’s frozen section. If pre-processed cauliflower rice isn’t your thing, it's equally as tasty making it at home. Just purchase a head of cauliflower and use a cheese grater or food processor to “rice” the vegetable into small, rice-sized pieces.
